This book does not profess to have all the answers but it is a good starting-point for those who want to know more about good eating. And, the recipes are easy and fun... and good for you; it's that simple!

 

Above all, allowances are made to accommodate your own freedom of choice - substitute ingredients are suggested because, as Leigh says, "Some people are only concerned about colours in the food and others are more extreme; some people cut out wheat or dairy and some don't, so my aim was to help you all with out compromising your personal decisions as a diet restricted family or person."

 The everyday essentials that make cooking more inspirational

and living on a restricted diet easer.

 

 

From the freezer

 

 Frozen beans

Tofu

 Tofu based cream cheese

 Some sort of fresh cheese

 Dairy free butter

 Soy milk (or your choice of milk and in a variety of flavours)

 Bakers yeast

 Meat and fish

 (Any meat of good quality will suffice. Get to know your local butcher so you can be well informed of the choices that you make and it allows you to get exactly what you want.)

 

 

 

In the pantry

 

 Maple, rice and golden syrup

 Rice, soy, potato and basin flour.

        (or your choice of flours depending on your personal limits and allergies.)

 White, brown and pure icing sugar

 Citric or ascorbic acid

 Bicarb soda

 Pure vanilla or essence

 Saffron

 Puffed rice

 Rice flakes

 Rice noodles

 Rice pasta of your choice

 Dried lentils

 Red kidney beans

 Vinegar of your choice

 Bamboo shoots

Fresh produce

 (This is also very much a personal choice,

 but you should always have fresh produce on hand and plenty of it .)

 

 

ABOUT LEIGH McPHERSON

 

As Leigh herself explains:

 

Growing up I always wanted two things.  To be a Chef (with talent), and to make my own unique impression on the lives of other people. So, when I was old enough I became a Chef and decided to put my talent into something constructive and to help those I could around me through diet adaptation.

 

 I first became interested in diet adaptation when a friend of mine became a mother to two troubled children. She discovered that through diet some of her children's problems were eased and others were eliminated if they restricted certain foods. When the kids went to school and became aware of there being “real food” in the world it became harder for them to stay on their diet. This is what inspired me to adapt foods so that the children didn't feel so different thus enabling them to feel like they fitted into the school environment better.

 

 Then I discovered that another friend of mine was diagnosed with celiac's disease and this encouraged me to expand my knowledge of the choices that people with food allergies have. I soon realized that the choices they had were quite limited and I wanted to do something about it.

  

Many hours were spent in research and even more in food adaptation. Friends became food testers enabling me to bring to you a choice of food that can be enjoyed by all people, whatever their food allergies.

 

Simplicity is the key to all my cooking ideas because I believe that everyone, no matter who they are, should be able to enjoy and have success in their quest to adapt their diet and thus integrate it to their busy lives. I established the compilation of food recipes to help those who already know their limits on food and want some fresh ideas.

 

I do hope that you enjoy this book and I hope it helps you to be more inspired in your cooking. There are so many people who already use ideas in this book with success that I have no doubt you will too once you have tried the recipes.
